BBQ Masala Mushrooms

The BBQ masala was invented during the Indika years – we kept feeling like we needed something unique that we could rub on a nice piece of meat, and this was the final combination we landed on. The BBQ Masala is more of a rub, and it is not only good on meats, but also wonderful on mushrooms. Here we used trumpet, but the masala is good on any variety of mushrooms. This masala is best added at the end of the cooking.

Step 1
In a medium sized frying pan over high heat, warm the olive oil. Drop the mushrooms and onions in all at once and cook on high heat until they are both cooked and most of the liquid has been evaporated.
Step 2
Add the BBQ Masala, salt and mix it in and turn the heat off. Serve warm or at room temperature.

3 tablespoons olive oil

1 pound of mushrooms of your choice

1/2 medium red onion, sliced

1 1/2 tablespoon BBQ Masala

Scant 1/2 teaspoon salt

Herbs for garnish

Notes & Variations

  • These mushrooms can be enjoyed just as they are, folded into a rice pilaf or tossed in a salad.
  • To take it up a notch, add a couple of tablespoons of coconut milk, yogurt, or heavy cream just at the end, when you toss in the masala.
  • Instead of sautéing, if you prefer to roast the mushrooms in an oven or over a grill, do not add the masala until almost the very end, after the mushrooms are cooked.
