Chaat Masala Beet Salad

Chaat masala is this incredible blend that can liven up most dishes, including a peanut butter and jelly sandwich. Chaat simply means ‘to lick’ and refers to the family of snacky foods that are found streetside in India. Here, a simple roasted composed beet chaat gets the crowning glory of chaat masala however, most salads are good candidates for a sprinkle of chaat masala.

Step 1
In a preheated 350F oven, roast the beets for about an hour. Cool and peel. Slice into ½-inch thick half or quarter slices.
Step 2
To make the salad, arrange the sliced beets on the plate evenly. Place the cucumbers around the beets. Drop dollops of yogurt and around the beets and cucumbers. Top with mango chunks and sprinkle the chaat masala all over.
Step 3
Garnish with herb sprigs and serve with a side of a lime wedge.
1 large beet or 2 small beets
3 Persian cucumbers or 1 medium English cucumber
1 mango, peeled and diced into 1/4-inch pieces
1 cup plain whole milk yogurt, whisked with a sprinkle of salt
Sprinkling of salt
2 teaspoons chaat masala
1/2 cup cilantro or mint sprigs
1/2 lime wedge
