Highly influenced by the Mughal dynasty, the cuisine of Punjab is rich and luxurious using dairy, nuts and different meats and vegetables. It is also largely farmland so is known for its simple home cooked fresh vegetables like saag and corn roti. Situated right next to Punjab, the cuisine of Haryana is very similar. Set in the Himalayas and often called the Land of the Gods, Uttarakhand is known for a simpler cuisine using vegetables, wheat, and lentils.
