Ocean Masala Roasted Cauliflower

Roasting cauliflower is one of best ways to cook a vegetable that can often get mushy when braising. The ocean masala adds a nice tart tone to the cauliflower; if you like your food spicy, add one minced serrano to it. Also, the way we cut the cauliflower, we use most of the ‘jacket’, which has as much flavor as the head but certainly more much-needed fiber.

Step 1
Preheat the oven to 400F.
Step 2
Cut the cauliflower head into smaller pieces, removing the center bottom portion that tends to be inedible. Cut the jacket greens into thinner slices. Toss the cauliflower with oil and salt.
Step 3
Spread on a greased baking sheet and roast in the oven for 14 minutes. Add the tomatoes, turn the temperature down to 300F and continue cooking for another 15 minutes.
Step 4
Take the pan out of the oven, sprinkle generously with ocean masala and place back in the oven.
Step 5
Turn the heat off and let the vegetables rest for 10 to 15 minutes before serving. 
1 medium cauliflower head
4 tablespoons olive oil or ghee
1 1/2 teaspoons salt
3 tablespoons ocean masala
1 cup cherry tomatoes
