Shrimp Hibiscus Soup

It is roselle season in Houston. Scientifically, it is known as Hibiscus sabdariffa. Last winter’s freeze killed the giant roselle bush in my backyard, however there are plenty of the fresh pretty red buds available at the Plant-It-Forward table stand at the weekend farmer’s market. The beauty of cooking with roselle is that unlike beets, which can turn brown with  long periods of cooking, the color remains a vibrant pink for a long time. Given their citrus like flavor, I usually make a lemonade with roselle and added ginger. However, here I bring you a hearty shrimp soup made with the liquid extracted from the roselle. The tart flavor of the roselle pairs very nicely with sweet shrimp!

1 Hour and 20 Minutes + Rest Time

Serves

Step 1
Combine the roselle buds with 4 cups of water and bring to a boil. Simmer for 20 to 25 minutes uncovered then let the liquid rest for another hour. Strain. You should be left with no more than 2 cups of extract.
Step 2
Almost immediately after, add the coconut milk, hibiscus extract and the ginger. Bring to a boil and add the potatoes and salt. Let the mixture simmer uncovered until the potatoes have cooked through and the liquid has reduced and slightly thickened.
Step 3
Finally add the chopped celery and shrimp. Bring a boil and turn it off. Let the soup rest for 10-15 minutes or so during which the shrimp will finish cooking.
Step 4
Serve hot garnished with herbs of your choice.

2 cup roselle buds

4 tablespoons olive oil

1/2 cup minced red onion

1 tablespoon minced garlic

1 teaspoon red chile powder

1 14-oz can coconut milk

2 tablespoons minced ginger

2 cups red potatoes, cut into 1/2-inch cubes

1 teaspoon sea salt


1 cup chopped celery

1-pound 16/20 shrimp, peeled and deveined 

Notes & Variations

  • You can do everything ahead of time except adding the shrimp – do that part when ready to eat it for maximum flavor.
  • Dried hibiscus works just as fine – use one cup dried to make the extract.
  • Instead of potatoes, you can add other vegetables or noodles to this soup.
