Cardamom Hot Chocolate

The weather in Houston has been cool, cloudy and crying out for a warm comforting luxurious drink. It’s Christmas season so what better than hot chocolate? Especially with a base that can be made ahead of time, tweaked to your taste and finished when desired. Here, we combine the hot chocolate made with cocoa powder and aromatic cardamom. Chocolate chips (light or dark) are added when finishing the drink. Merry Christmas!

Step 1
Over high heat in a small stockpot, bring the whole milk, heavy cream and brown sugar to a slow boil, making sure the sugar has dissolved.
Step 2
Whisk in the cocoa powder, cardamom and salt and turn the heat off.
Step 3
Distribute the chocolate chips in 4 cups or mugs.
Step 4
Pour the chocolate mixture into the 4 mugs. Let it rest for 2 to 3 minutes then stir slowly and enjoy!

3 cups whole milk

1 cup heavy cream

1/4 cup turbinado or brown sugar

1-2 tablespoons cocoa powder

1 teaspoon finely ground cardamom

Light pinch of salt


1 cup chocolate chips

Notes & Variations

  • The chocolate chips can be added to the base at the time of cooking as well just before serving – just make sure they don’t stick to the bottom or burn.
  • If the cardamom is not finely ground, you may have to strain the drink before serving it.
  • For a milk chocolate finish, use 1 tablespoon cocoa powder and use milk chocolate chunks. For a darker finish, use 2 tablespoons cocoa powder and dark chocolate chunks.
