Purple Potato & Pepper Roast

Pepper season is in full swing in Houston right now, from shishitos and jalapeños to green bells and sweet orange peppers. For the past few weeks, peppers of every shape and color have appeared at nearly every farmers market stand. These small green peppers are delicate in flavor with a crisp texture. Japanese purple sweet potatoes are less sweet and starchy than traditional orange sweet potatoes, making them a delicious partner for the peppers' tangy bite.

Step 1
Without peeling, cut the potato into 3- to 4-inch-long wedges. In a bowl, toss with 2 tablespoons olive oil, ½ teaspoon salt, ½ teaspoon black pepper and the garlic. Arrange the wedges in a single layer on a lightly greased baking sheet, leaving space between each piece.
Step 2
Place the baking sheet in the oven, then turn the oven on to 450 degrees. Roast uncovered for 10 to 12 minutes, or until the potatoes are lightly crisp on the outside and tender on the inside. A fork should slide easily through a wedge.
Step 3
Meanwhile, halve the peppers and cut them into thick strips. Toss with the remaining 2 tablespoons olive oil, ½ teaspoon salt, ½ teaspoon black pepper and the ginger.
Step 4
When the potatoes are done, add the peppers to the baking sheet alongside the potatoes. Return the pan to the oven for 2 to 3 minutes. Turn off the oven and let the vegetables rest inside for 5 minutes.
Step 5
Transfer to a serving platter. Crumble the goat cheese over the vegetables, sprinkle with the herbs and drizzle with honey. Serve warm with lemon wedges on the side.

1 medium Japanese purple potato

4 tablespoons olive oil, divided

1 teaspoon salt, divided

1 teaspoon black pepper, divided

1 tablespoon minced garlic


1 tablespoon minced ginger

2-3 green peppers


3 ounces goat cheese

2 tablespoons honey

2 tablespoons roughly chopped herbs

1/2 lemon, cut into wedges

Notes & Variations

  • Japanese purple sweet potatoes are available at some Whole Foods Markets and Central Market. Be sure to choose a variety that is purple on the inside.
  • For a dairy-free option, omit the goat cheese and substitute a drizzle of tahini.
  • Fragrant herbs such as dill, basil or mint work especially well in this dish.
