Sheet Pan Okra

From pickled and fried to using it to thicken a stew, there are many ways to enjoy okra here in the South. However, one of the most overlooked and easiest ways to cook okra is to simply roast it. Using seasonings of your choice, spread it on a baking pan and let the oven do the work. If the okra is not young and tender, slice it into wheels or cut it lengthwise. Okra roasted in the oven does not turn slimy. Serve the okra warm or at room temperature. Turn it into dinner by pairing it with a pot of beans and rice, or use it to top a tangy green salad.

Step 1
Preheat the oven to 350 degrees. Trim the tops from the okra, leaving the rest whole. Toss the okra with the sliced red onions, olive oil, black pepper and sea salt.
Step 2
Spread the okra on a quarter-sheet pan or another baking pan large enough to hold it in a single layer.
Step 3
Roast for 7 to 8 minutes; do not overcook. The okra will turn a darker green. Turn off the oven and let the okra rest inside for a few more minutes.
Step 4
Combine the lemon juice, mango and minced ginger.
Step 5
Remove the okra from the oven and drizzle the lemon-mango mixture over the top.

1-pound tender young okra

1 small red onion, thinly sliced

4 tablespoons olive oil

1 teaspoon black pepper

1 teaspoon sea salt


Juice of one lemon

1/3 cup ripe mango, minced (roughly 1/2 of a mango)

1 tablespoon minced ginger
