Spiced Truffles

Chocolate truffles are simply chocolates that have been flavored with different things or combined with nuts. The quality of chocolate is really showcased in a truffle so find the best chocolate you can when making them.

Step 1
In a small saucepan, combine the heavy cream with the chai masala and bring to a boil. Cool and let it rest for 10 to 12 minutes. Strain.
Step 2
Over a double boiler, in a large metal (heat-proof) bowl, heat the chocolate with the chai cream. As soon as the chocolate has melted, take it off the heat.
Step 3
Let the chocolate cool for 20 to 30 minutes or until it has hardened slightly.
Step 4
Roll into 3/4-inch balls and coat in cocoa powder. Keep refrigerated.
3/4 cup (170 grams) heavy cream
1 tablespoon chai masala
Pinch of sea salt
2 cups (340 grams) 85% Valhrona chocolate chunks
1/2 cup cocoa powder for coating

Notes & Variations

  • These truffles will keep for two to three months in the refrigerator.
  • Add two tablespoons of of alcohol of your choice – Irish Baileys or Kahlua work well.
  • Make hot cocoa with remaining cocoa powder.
