Steak and Eggs
Steak and eggs are popular among Texans, and there are multitudes of ways to approach the dish. If you prefer meat in small portions, incorporate peppers, tomatoes, mushrooms and onions. Use ground beef instead of steak, or swap in meat trimmings from a steak or slices of skirt steak for a large hunk of meat. Mince ginger and add it with abandon for a burst of flavor. Cook quickly in a frying pan with onions and vegetables, then finish by adding the eggs and covering the pan. Be careful not to overcook the meat, or it will get tough. A few minutes later, breakfast is ready in one pan.
