Shrimp Jalfrezi

Jalfrezi is a style of a saucy stir fry that originated in Bengal. It usually has peppers, onions and tomatoes with some sort of protein like chicken, paneer or shrimp. However, I’ve seen jalfrezis with potatoes, green beans, corn, squash, okra and numerous other vegetables so like for most Indian dishes, use what you have and make it your own.

Step 1
Marinate the shrimp with salt, turmeric and black pepper and set aside.
Step 2
In a large wok-like pot over very high heat, warm up the ghee and pop the cumin seeds.
Step 3
Immediately after, add the bell pepper and onions and start stir frying them for 2 to 3 minutes. Turn the heat down if the vegetables start to burn however, they should get a bit of a char.
Step 4
Next, add the sliced garlic, serrano and ginger and continue stirring.
Step 5
Finally, add the shrimp and the tomatoes and continue cooking on high heat until the tomatoes have wilted and shrimp has cooked through.
Step 6
Stir in the chopped cilantro before serving.

1 pound shrimp, deveined and tails removed

1 teaspoon sea salt

1 teaspoon ground turmeric

1 teaspoon black pepper

4 tablespoons ghee

1 teaspoon cumin seeds

1 whole bell pepper (any color), cut into 1-inch squares

1 medium red onion, peeled and cut into 1-inch squares

6 to 8 cloves of garlic, sliced

1 serrano pepper, minced

2 cups of chopped tomato chunks or cherry tomatoes (optional)

1 teaspoon sea salt

1 cup cilantro (stems and leaves) minced

Notes & Variations

  • Depending on what vegetable you add, they can go in before the shrimp or with. If adding peppers and green beans, they should go before ~ if adding asparagus, add it with the shrimp.
  • Serve the jalfrezi with rice or bread.
