Green Masala Shrimp Kebabs

A bright verdant green masala is perfect for shrimp since they cook so quickly that the masala retains its color as well as flavor. The shrimp kebabs can be roasted in the oven or cooked over a grill. If you make extra masala, use it over toast for breakfast or add it to scrambled eggs.

Step 1
Soak the kebab sticks in water for an hour or two or overnight.
Step 2
To make the green masala, in the bowl of a small food processor or a blender, combine the cilantro and parsley (with stems) with serrano, garlic, olive oil, lemon juice, garam masala and salt until smooth. Add a tablespoon or two of water if needed. If storing it for a day or two, cover the top with olive oil.
Step 3
To bake the shrimp kebabs, preheat the oven to 450F. Skewer the shrimps 3 to 4 to a kebab stick and spread them on a baking sheet. Roast in the oven for 5 to 7 minutes or until the shrimp is cooked through.
Step 4
Serve with a fresh squeeze of lime and/or plain yogurt.

10 to 12 kebab sticks

1-pound medium sized shrimp, shelled and deveined

3 to 4 tablespoons olive oil

1 teaspoon salt

Green Masala

1 bunch cilantro

1 bunch parsley

1 to 2 serrano peppers

6 to 8 cloves of garlic

3 to 4 tablespoons olive oil

Juice of one lemon

1 teaspoon garam masala

1 teaspoon salt

Notes & Variations

  • Replace the parsley with basil or mint – just note that with mint, while the flavor will be wonderful, the color will deteriorate really quickly.
  • The shrimp can be cooked ahead of time and tossed in a green salad or a pasta salad.
