Simple Baked Oysters

Oysters are delicious saltwater mollusks vital to the ecosystem, filtering pollutants out of the water and providing a habitat for other species, including mussels or barnacles. A great source of omega-3 fatty acids, oysters also help boost our immune system, regulate inflammation and keep our hearts and brains in check.

After trying a dozen different ways to bake oysters, I concluded that they are at their brightest sprinkled with just a few key spices to enhance their naturally briny flavor, topped off with ghee and lightly baked.

Step 1
Preheat oven to 350°F, crack the oyster open, and lay them on a baking sheet.
Step 2
Sprinkle salt, amchur, chopped cilantro, and chile powder. Pour melted ghee on top and place the oysters in the oven for 4 to 5 minutes. The oysters should turn plump and shiny with a clear liquid around the edges.
Step 3
Serve immediately with sliced cucumbers.
12 to 14 fresh oysters in the shell
Pinch of sea salt
2 teaspoons amchur powder
2 tablespoons chopped cilantro
Pinch of chile powder (optional)
3 to 4 tablespoons ghee
Sliced cucumbers for serving

Notes & Variations

  • Replace cilantro with other herbs like mint or basil.
  • Replace ghee with coconut or olive oil.
  • Replace chile powder with freshly ground black pepper for a milder version or amp it up with the addition of finely minced serrano chile.
