Turmeric Rice

A basic rice dish but like most dishes in Sri Lanka, it is made with a bit of coconut milk.

Serves

Step 1
Soak the basmati rice for 2 to 3 hours. Drain.
Step 2
In a small stockpot over high heat, combine the rice, olive oil, coconut milk, turmeric, black pepper and salt and bring to a boil.
Step 3
Lower the heat, add 2 cups of water, cover and simmer for about 5-7 minutes, keeping an eye on the rice so it does not dry out. If it appears dry, add some more water. When almost all the liquid has been absorbed and the rice is tender, turn the heat off and let it rest for 20 to 30 minutes. The rice will plump up a little more during the rest time.
1 cup basmati rice
3 tablespoons olive oil
1 cup coconut milk
1 teaspoon turmeric
1 teaspoon black pepper
1 teaspoon salt
