Cucumber Raita

A classic raita. This is recipe shows how simple a raita can be. Red onion and a vegetable is all it takes. Feel free to make some additions with whatever is in the fridge.

Step 1
Whisk the yogurt in a large bowl with the salt and cumin. Then fold in the chopped cucumber, onion, and apple. 
Step 2
Heat the oil and pop the mustard seeds. Fold into the raita and refrigerate until ready to serve.
2 cups plain whole-milk yogurt
1 teaspoon ground cumin
1 teaspoon sea salt
2 medium cucumbers (or 1 large cucumber), diced to 1/8-inch
1/2 small red onion, minced
1/2 small red onion, minced
1 green apple, minced
3 teaspoons olive oil
1 teaspoon black mustard seeds

Notes & Variations

  • Will keep for 2 to 3 days in the refrigerator. Onions and cucumbers generate a lot of water. If the raita seems watery, simply drain.
  • Add lemon juice or lemon zest for added brightness.
  • Substitute the red onion for green onions.
