Cucumber Radish Salad

Fresh cucumbers, spicy serrano, and nutty peanuts make this a spicy and refreshing salad.

Step 1
Slice the cucumbers lengthwise in half, and then again lengthwise in half. Cut into quarter moons and set aside in a bowl.
Step 2
Add radishes, serrano, peanuts, pepitas, lemon juice, and salt. Toss to combine.
Step 3
Heat the oil and pop the mustard seeds, pour over the salad and toss before serving.
2 medium cucumbers, or 1 large cucumber
1 medium radish, sliced thin rounds
1 serrano, minced
1/4 cup roasted peanuts
1/4 cup raw pepitas
Juice of 1 lemon
1/2 teaspoon sea salt
2 tablespoons olive oil
1 teaspoon black mustard seeds

Notes & Variations

  • Add sesame seeds in addition to or instead of peanuts.
  • Dice the cucumbers and the radishes into cubes to create more of a chutney that can be used like a condiment.
