Green Salad

Wilted kale, crunchy lettuce and the tasty bite of cumin seeds make this salad extra special. The mint is added for fragrance as well as flavor and the sesame seeds for crunch and to make our bones stronger!

Step 1
Tear the kale into smaller pieces or slice thinly. Separately, tear the lettuce leaves into smaller pieces. Remove mint leaves from the stems and combine with the lettuce. If the leaves are too big, slice them. Refrigerate until ready to use.
Step 2
In a large frying pan, heat the olive oil and pop the cumin seeds. Immediately add the kale and cook for 1 to 2 minutes or until it is wilted. Transfer to a large bowl. Add the maple syrup, serrano pepper, lemon juice and salt and mix until incorporated. Fold in the red lettuce leaves and sesame seeds. Serve immediately.
1/2 bunch kale
1 bunch red or green leaf lettuce
1/2 cup loose mint leaves
4 tablespoons olive oil
1 teaspoon cumin seeds
2 tablespoons maple syrup
1/2 serrano pepper, minced
Juice of 2 or 3 lemons
1 scant teaspoon salt, to taste
1/4 cup sesame seeds
