Ocean Masala Roasted Potatoes

Ocean masala makes a wonderful tangy topping to roasted vegetables like regular or sweet potatoes, carrots, or parsnips. The sour depth of the mango powder along with the other aromatic spices adds a brightness. Just be sure to add the masala towards the end of cooking, or it may burn. Here we added yogurt and feel free to amp it with up sour cream or heavy cream.

Step 1
Preheat the oven to 350F. Grease a baking sheet or a cast iron skillet.
Step 2
Wash the potatoes, then slice them into 1/4-inch wheels. Toss them with olive oil and salt and place them on the pan. Roast in the oven for 25 to 30 minutes or until they are golden on top and edges.
Step 3
Sprinkle the ocean masala on top, take some of the oil in the pan and drizzle it back over the potatoes. Place the pan back in the oven for 3 to 4 minutes.
Step 4
Remove and let the potatoes rest for 5 to 10 minutes. Drizzle the yogurt on top, scatter the herbs and serve.
1-pound yellow potatoes
4 tablespoons olive oil
1 1/2 teaspoons sea salt
2 tablespoons ocean masala
1/2 cup plain yogurt
Herbs for garnish
