Spiced Walnuts

These sweet, spicy and tart nuts are a big hit at Pondicheri Bake Lab + Shop. Flavors that will satisfy all of your tastebud’s desires.

Step 1
Preheat the oven to 350°F. Make the simple syrup by heating the water with equal parts sugar until the sugar fully dissolves.
Step 2
Toss the walnuts with the simple syrup, cinnamon, amchur, chili powder, and salt. Spread onto a parchment paper lined sheet pan.
Step 3
Bake at 350°F for 10 minutes then take them out and stir. Lower oven to 300°F and bake for another 15 minutes. Remove from the oven and give one final stir. If still moist, bake for another 10 to 12 minutes. Leave in the pan to dry out. 
Step 4
Store in an airtight container in a cool place.

1 pound walnuts

3/4 teaspoon ground cinnamon 

3/4 teaspoon amchur

1 teaspoon chili powder 

2 teaspoon sea salt 

Simple Syrup:

1/4 cup + 2 tablespoons sugar 

1/4 cup + 2 tablespoons water

Notes & Variations

  • For ease, make 2 cups of simple syrup. For a sweeter flavor, use more simple syrup, then bake for a bit longer so that they dry out.
  • For more heat, up the chili by 1/4 teaspoon.
  • Use as a topping for ice cream or add to cookie dough.
  • Gift in a mason jar for the holidays.
