Chicken Mince Kebabs

Making little sliders or kebabs from minced meats is one of the most delicious and easy ways to pull off a crowd pleaser. Whether using chicken, lamb, beef, or a combination, adding spices, herbs and minced onions is the way to go. The mushrooms add another layer of depth to the kebabs. There are many ways to go with this – make a larger version and turn it into a burger. Or turn it into a curry by making the round meatballs and pouring a sauce or curry over them. That tiny amount of yogurt goes a long way in adding moistness to the texture.

Step 1
Preheat the oven to 400°F. Combine the chicken with mushrooms, yogurt, salt, black pepper, chile powder, turmeric, amchur, cinnamon, green onions, and herbs.
Step 2
Form little slider like patties (about 2 inches in diameter) and place them on a greased baking sheet.
Step 3
Place the baking sheet in the oven for 5 to 6 minutes (if using dark meat, cook for 10 to 12 minutes). Take the tray out and let the chicken kebabs rest for a few minutes.
1 pound ground chicken breast
1 cup cooked mushrooms, finely chopped
2 tablespoons thick whole-milk yogurt
1 1/2 teaspoons sea salt
1 teaspoon freshly ground black pepper
1 teaspoon chile powder
1 teaspoon ground turmeric
1 tablespoon amchur
1 teaspoon ground cinnamon
2 to 3 stalks green onions, minced
1 cup chopped herbs such as cilantro, mint, parsley, etc.

Notes & Variations

  • This recipe can be done with other kinds of meat like beef, turkey or lamb.
  • Instead of mushrooms, use grated raw cauliflower or carrots.
