Coconut Mango Lassi

Canned mango from India is particularly delicious as the varieties of mango are aromatic and silken. This lassi is more of a dessert than a drink with a meal, the ground cardamom really enhances the sweetness of the mango.

Step 1
In a large bowl combine mango puree and coconut milk, then whisk until smooth.
Step 2
Add cardamom to taste.
Step 3
Keep refrigerated and stir well before using in cocktails or as a beverage.

1 can mango puree (30 oz)

3 cups coconut milk

1 1/2 teaspoon ground cardamom

Notes & Variations

  • Be sure to shake the coconut milk well before using it.
  • For a dairy version, replace the coconut milk with plain yogurt.
  • Cardamom works best but can be replaced with vanilla.
  • The beverage keeps well for 5-7 days.
