Mint Walnut Chutney

Chutneys are a versatile condiment to use wherever you want added flavor. Mint, coconut and toasted walnuts make a fantastic combination. The mint in this chutney causes it to oxidize rather quickly. To make sure it holds its green color we added some acid (lemon juice).

Step 1
Combine all ingredients in a blender until smooth. Serve and enjoy.
Step 2
If not serving immediately, cover with plastic wrap that touches the surface so as to not allow any oxygen to come in contact with the chutney. If it has oxidized, simply skim the top layer off with a spoon.
2 cups mint, loosely packed
1/2 cup walnuts, toasted
2 whole serrano chile
1/2 cup coconut milk
1/2 teaspoon sea salt
Juice of 1/2 lemon

Notes & Variations

  • Delicious with breads, vegetables, rice, or salads.
  • Substitute mint with cilantro or enjoy a combination of cilantro and mint.
