Collard Parsley Salad

Collard green, the vitamin-rich hearty leaf beloved in the south can take many forms on your table this holiday season. Part of the brassica family, collards grow in many parts of the world including Africa and Kashmir, northern India and there are many ways to prepare them from slow braising, to folding them into a rice pilaf to quick stir fries. A few weeks ago, I experimented with blanching the leaves and turning them into a fresh salad and this way to eat collards has become a new favorite. Add apples or pears, a cheese of your choice, a touch of sweetness to balance to slight bitterness of the leaves.

Step 1
Wash the collard greens thoroughly in running water. Slice the main stems and discard. Cut the remaining part of the leaves into 2-inch squares or slices.
Step 2
In a medium sized stockpot, bring 4 to 6 cups of water to a boil. Add a teaspoon of salt and add the chopped collard leaves. Turn the heat down, cover and cook for just one minute. Turn the heat off and remove the collard leaves to a bowl filled with cold water. They should be wilted but bright green. Before making the salad, squeeze the leaves dry of any water.
Step 3
Rinse the parsley stems and pull out the leaves. Core the apple, cut into quarters and slice thinly.
Step 4
In a large bowl, combine the collard greens, parsley leaves, apple slices, walnuts and cheese.
Step 5
Pour the olive oil, lemon juice, honey salt and pepper over the salad ingredients. Mix thoroughly using your hands making sure the collard leaves have not clumped together. Serve immediately.

1 bunch collard greens

1 bunch parsley

1 apple

1/2 cup walnuts, toasted and chopped

3 to 4 ounces cheddar cheese

Dressing:

4 tablespoons extra virgin olive oil

2 tablespoons lime juice

2 tablespoons honey or maple syrup

Generous pinch of salt and pepper

Notes & Variations

  • The salad can be put together in a bowl and tossed when ready to eat. It will also stay fresh and crunchy for a couple of hours after it is made.
  • To toast the walnuts, place flat in a tray and put in a 300F oven. When the oven has reached 300F, turn it off. Let the walnuts rest in the oven for another 10 minutes, then remove. Cool and chop.
